Tasting Notes: The Ciavolich Pecorino Colline Pescaresi Aries is produced from the local Pecorino grape. Typical of the variety, it is full and rich, even more so from the slight aging the wine sees in French oakl. The grapes come from one hectare of pergola abruzzese planted in 2000 and from one hectare of cordon-double guyot in Loreto Aprutino planted in 2011. The grapes are hand picked in the first daylight and carried directly to the winery in small baskets. They are pressed softly and the must ferments under controlled temperature in stainless steel vats. When fermentation ends a small part of it is moved into used French oak tonneaux for a short elevation of three months. At the end of February the wines are reassembled and bottled to continue aging for about two months.
Pecorino is among the many grapes Chiara produces. The wine shows notes of lemon and wet stone or yogurt. Ripe apples on the palate with a touch of creaminess. It's rich in texture and perfect to pair with a variety of lighter meat dishes as well as an apertif.
Estate History: In the early 2000's, Chiara Ciavolich was compelled to better understand the wines of her ancestors who migrated to the area in the 1500's - she even has an incredible cellar dating back to that time with a storied local history of being occupied by the SS during the Second World War. Of this desire, the crown jewels of her farm were born - the rare and singular "Fosso Cancelli" wines. The Fosso Cancelli bottles are made from the finest plots (generally old vines), crushed in a wooden basket press, fermented with native yeasts in old oak and/or amphora without temperature control and bottled entirely by hand.
